PRESERVED EGGS WERE SOLD AS FRESH EGGS

The fraud prevention service has drawn up numerous reports against the offending traders

As happens every year at this time, when the laying of hens suffers a pause, large quantities of eggs leave the cold stores of Paris or are shipped to the capital by provincial egg preservation houses. The control of the fraud prevention service wanted to know in what conditions the sale of these preserved eggs was practiced; it has therefore carried out, for several days, numerous investigations whose results are edifying.
A prefectural decree requires traders to put preserved eggs on sale with a label clearly indicating their quality. However, the fraud prevention commissioners found that many grocers and dairymen were selling them at a high price without any indication of quality, leading buyers to believe that they were fresh eggs.
They found some retailers who were so unscrupulous as to put preserved eggs on sale with the labels: "Fresh eggs" or "Eggs of the day".
Many reports were drawn up against offenders for breaching the August 1905 law on the prevention of fraud.
Surveillance of the sale of eggs will continue.
